Duvel & skewers of scallops

Ingredients for 4 persons:

For the marinade:

  • 1 shallot
  • ½ branch of cilantro
  • ½ lemon
  • 6 cl of olive oil
  • Salt and pepper

For the skewers:

  • 2 zucchini
  • 12 scallops
  • Salt and pepper

For the topping:

  • 100 g of parmesan (or other hard cheese)
  • A few roasted hazelnuts
  • Pink pepper

  • Rinse the zucchini in clean water and cut them into thin strips using a peeler.
  • Place the zucchini slices and the scallops in a deep dish.
  • Peel then finely chop the shallot.
  • Finely chop the cilantro.
  • In a bowl, combine the lemon juice, olive oil, shallot and cilantro.
  • Pour the marinade over the zucchini tagliatelle and the scallops, mix and set aside for an hour in the refrigerator.
  • Assemble the skewers on wooden picks, alternating the zucchini slices and the scallops.
  • Season with salt and pepper and cook everything in a pan for 5 to 6 minutes, turning the skewers regularly during cooking.
  • Just before serving, add a few shavings of parmezan and hazelnuts on the skewers. Sprinkle with pink pepper.
  • Serve immediately with the rest of the marinade.
